The Antarctic Treaty System requires that the effects of potential human disturbance be evaluated, such as through the development and evaluation of Initial and Comprehensive Environmental Evaluations (IEEs and CEEs), and through the implementation of Management Plans for Antarctic Specially Protected Areas (ASPAs) and Antarctic Specially Managed Areas (ASMAs). The effectiveness of these management processes hinges on the quality and transparency of the data presented, particularly because independent validation is often difficult or impossible due to the financial and logistical challenges of working in the Antarctic. In a review of these documents and their treatment of wildlife survey data, we find that the basic elements of best data practices are often not followed; biological data are often uncited or out-of-date and rarely include estimates of uncertainty that would allow any subsequent changes in the distribution or abundance of wildlife to be rigorously assessed. We propose a set of data management and use standards for Antarctic biological data to improve the transparency and quality of these evaluations and to facilitate improved assessment of both immediate and long-term impacts of human activities in the Antarctic.

Cultural brokers at national and local levels, recognizing the lucrative potential of tourism, have learned to construct commoditized cultural packages for tourist consumption. In this paper I examine one such packaging phenomenon, and ask, “What is the effect of the commoditization of culture for purposes of tourism on local communities?” This paper investigates how a traditional step dance practice in North Kerry, Ireland, was contemporized and commoditized in the 1980s by Siamsa Tíre, the National Folk Theatre of Ireland, with a view to informing cultural understandings of Ireland and attracting tourists. Examining the impact of cultural tourism on the development of Siamsa Tíre, I argue that Siamsa Tíre's appropriation and re-presentation ofthe local Molyneaux traditional style of step dancing produced something new and gave the Molyneaux style a new lease on life at a time when this traditional dance practice and its associated rural contexts of performance were in decline.

The spectacular popularity of Riverdance in 1994, in Ireland and abroad, prompted critical reflection on notions of cultural authenticity, ethnicity, and identity. The attention focused on step dance led to increased discussions of national characteristics. This essay argues that the perceptions of Irish step dance, at first local, then nationalized and globally exported, reflect larger issues of relevance to the Irish state. Although these perceptions have influenced the development of Irish step dance locally, nationally, and globally, the dance practices themselves have assisted in molding and maintaining these same perceptions. I will illustrate how the commodification of Irish step dance practice, particularly during the past five years, has acted as a major catalyst for the emergence of marginal dance practices and has reenergized the Irish step dance tradition. Throughout this essay, I use the expression “marginal dance practice” to contrast with competition dance culture, which I interpret as the mainstream, accepted canon.
Although no one grand theory of globalization exists, considerable thinking on the subject has emerged over the past several decades among theorists from both the humanities and the social sciences. The term “globalization” appeared in the mid-1980s to replace others such as “internationalization” and “transnationalization” as a description for our ever shrinking world and the perceived process of “cultural homogenization on a global scale” (Hoogvelt 1997, 114; King 1991, viii). Different paradigms exist in the literature and, for the most part, they fall within two areas: international relations and world-system-theory.
Comparative emulsifying properties of sodium caseinate and whey protein isolate in 18% oil in aqueous systems

Both whey protein isolate (WPI) and Na caseinate gave similar emulsion capacity-concentration profiles at pH 7. The emulsion capacity of aqueous solutions of WPI was relatively independent of pH while the values for caseinate fell in the isoelectric region. Saline (7·59 g/1) compared with aqueous solutions improved emulsion capacity, particularly above pH 7. At low concentration, WPI had greater emulsifying capacity and gave finer globule dispersion than sodium caseinate. Increase in emulsifier concentration, within a certain range, increased stability, improved dispersion and reduced capacity. Ethanol up to about 20% w/w improved the emulsion capacity of both proteins while at 50% the phases separated. Heat treatment (> 65 °C) of WPI solution before emulsion formation impaired capacity and stability. Heat treatment of preformed WPI emulsions did not have the same effect. Na caseinate and WPI each formed a thin continuous layer of relatively uniform thickness over the oil globule surfaces while denatured WPI appeared aggregated and relatively unevenly distributed at the oil-aqueous interface.
